Carrot Cookie Sandwiches with Feathers, Frills and Pearls

These are absolutely delicious even without the filling and very easy to make.

I found the recipe in a Winter Coles magazine but I believe it is a copy from a Martha Stewart cookbook.



Ingredients

* 250 g butter room temperature
* 1 cup brown sugar
* 1 tsp vanilla essence
* 2 cups plain flour
* 1 tsp baking powder
* 1 tsp bicarbonate of soda
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 1 1/2 cups carrot finely grated
* 1 cup rolled oats
* 1 cup sultanas
* 2 eggs

Filling

* 250 g spreadable cream cheese
* 1/2 cup pure icing sugar
* 1 tsp vanilla essence

Method

1. Using electric beaters, beat butter, brown sugar and vanilla together in a large bowl until pale and creamy. Add eggs one at a time beating well after each addition. Sift dry ingredients over butter mixture and gently fold together until combined. Add carrot, oats and sultanas and mix well. Cover and chill for 1 hr until firm.
2. Preheat oven to 180 °C or 160 °C fan. Line 2 baking trays with non-stick baking paper.
3. Roll tablespoons of dough into balls. Place on prepared trays allowing room for spreading. Flatten slightly with a spatula. Bake for 15 mins until golden. Cool on a wire rack.
4. Make Filling: using an electric mixer, beat all ingredients together in a medium bowl until smooth. Spread filling onto half of the cookies. Sandwich with remaining cookies. Store in an airtight container in the refrigerator.
