Wholemeal Banana Bread

This recipe is from the Healthy Cooking Cookbook. Enjoy!





Ingredients

1/2 cup soft brown sugar
1 egg
200g sour cream
2 tablespoons oil
2 ripe mashed bananas
1 cup SR flour
1/4 cup wholemeal SR Flour
1/2 teaspoon bicarbonate of soda
2 tbs unprocessed bran
1 tsp ground cinnamon
1/2 teaspoon ground nutmeg

Method

Preheat oven to 160C
Line loaf tin with baking paper
Place sugar, egg, sour cream, and oil in bowl and whisk until well combined
Fold in banana and sultanas
fold in flours, bicarbonate soda, bran and spices
Spoon mixture into tin and bake for 50 minutes or until cooked through when tested with skewer
Serve warm or cold with low fat yoghurt.
Can be toasted
