Orange Almond Syrup Puddings

Look away now if you have any aversion to amazingly simple and delicious recipes you can't get enough of!!! I got this recipe out of the Free Coles Magazine June 2013 Edition (latest one out now)


Ingredients

2 medium oranges, cleaned adn quartered
4 eggs
11/3 cups almond meal
3/4 cup caster sugar
1/2 tsp baking powder
yoghurt to serve

Syrup
3/4 cup caster sugar
3/4 cup orange juice

Method

Preheat oven 180 C
Grease 6 muffin tins or 12 large cupcake tins and line base with cut round baking paper
Place orange in microwave bowl, covered for 8 mins. Let cool
Remove pips, leaving skin intact, put in blender and process until pureed
Add eggs, almond meal, sugar and baking powder and process util smooth
At this stage try not to eat the orange tasting mixture or you may have one less cupcake.
Oh and don't make this around meal times as you may have 2 less cupcakes!
Pour remainder of mixture in cupcake tins
Bake 35-40mins
Cool in tins for 5 mins
Loosen cupcakes by running knife around edge and invert onto board or rack
To make syrup stir the sugar and juice in a small saucepan over low heat without boiling and
until sugar dissolves
Bring to boil and cook without stirring for 6 mins or until syrupy as it thicken as it cools
Drizzle the puddings with the syrup and serve with yoghurt.
