Passionfruit Melting Moments

Unfortunately these are very easy to make and soooooo delicious. So these come with a High Danger Warning. I am hoping I can stop myself as I was wanting to make these for the Jewellery Morning Tea on Friday.



Ingredients

250g unsalted butter softened
1 tsp vanilla essence
1/2 cup pure icing sugar sifted
2 cups plain flour
1/3 cup cornflour

Passionfruit filling

60g butter softened
1 large passionfruit
1 cup pure icing sugar sifted

Method

Preheat oven to 16C and line 2 baking trays with non-stick baking paper
Cream butter, vanilla and icing sugar with electric mixer until light and fluffy
Sift flours over butter mixture
Beat on low until soft dough forms
Roll small tsp size balls and place on trays
Using fork dusted in flour lightly flatten each biscuit
Bake for 15 minutes and cool on trays
For filling beat butter until light and fluffy
Stir in passionfruit and icing sugar
Spread flat side of 1 biscuit with tsp filling and tip with another biscuit
Dust with icing sugar and serve
Can be made up to 2 days ahead and stored in airtight container already made up or unmade
store for up to 5 days in airtight container
