White Chocolate Rocky Road



Ingredients

250g marshmallows
100g dried cranberries
110g roughly chopped macadamia nuts
60g pistachios
1/3 cup desiccated coconut
360g white chocolate chopped
(I personally added red dinosaurs and snakes from the Natural Confectionary Company brand)

Method

Grease 20cm square cake pan and line base and sides with baking paper allowing
overhang on all sides
Combine marshmallows, cranberries, nuts and coconut in bowl
Place chocolate in a microwave safe bowl and heat on medium-high for 1-2 minutes,
stirring every 30seconds with a metal spoon or until smooth.
Pour chocolate over marshmallow mixture.
Mix well and spoon into prepared pan pressing down with spatula
Refridgerate for 2 hours or until set
Using warm knife, cut into squares
Serve and Enjoy!

Note: These cn be stored for up to 2 weeks in an airtight contatiner.
