Chocolate Melting Moments

Do I have to say that these are delicious! The mascarpone filling is DELICIOUS!







INGEREDIENTS
  • 350g unsalted butter , softened
  • 80g icing sugar
  • 300g plain flour
  • 50g cornflour
  • 25g cocoa

FILLING

  • 250g mascarpone
  • 4 tbsp icing sugar
  • 50g plain chocolate
METHOD
  • Heat the oven to 180C/fan 160C/gas 4. Beat together the butter and icing sugar until pale and creamy, then add the vanilla extract and mix well. Sift the flour and cornflour over and mix thoroughly. Halve the mixture and add the cocoa to one half. Mix well and add a drop of water if the mixture is too stiff.
  • Line 2 baking trays with baking paper and spoon the mixtures into small balls. Leave a little space between each biscuit.
  • Bake for 15-20 minutes, or until cooked. Remove from the oven and allow to cool. Meanwhile, mix the mascarpone and sugar until smooth. Melt the chocolate in the microwave for 2 minutes in 30 second intervals. Add the melted chocolate and mix until smooth.
  • Sandwich together, sprinkle with icing sugar.
  • Enjoy!
