I am trialling a few dishes for my birthday lunch and came across this one to be served with the main. It is very delicious am thinking nice and healthy. Sorry about the poor lighting in the photos, it was dark.
Ingredients
2 eggplants sliced
2 zucchini sliced
olive oil for brushing
1 x 400g can chickpeas rinsed and drained
1/4 cup basil leaves
1 cup mint leaves
200g hard fetta cheese sliced
Dressing
1/3 cup olive oil
2 1/2 tbs lemon juice
1/2 tsp sugar
pinch ground fennel seeds
Method
Heat pan or char-grill pan over medium heat.
Brush eggplant and zucchini with oil and cook in batches for 3 minutes each side or until tender
Make dressing by whisking together all ingredients
Arrange eggplant, zucchini, chickpeas, basil and mint on plate
Top with fetta and spoon dressing over top.
Enjoy!
mmmm....looks delish! i know a lot of people don't have a taste for eggplants, but i personally LOVE them...and feta too! im definitely gonna try making this tonight...thanks for sharing sweets!
