My son loves these and asked if we could make some. Turns out my daughter whose not really into biscuits devoured these aswell. I think the secret is the almond meal.
Ingredients
125g butter
1/2 tsp vanilla extract
1/2 cup caster sugar (120g)
1 cup almond meal (120 g)
1 egg
2/3 cup plain flour
2 tbs raspberry (or whatever jam is in the fridge) jam
Method
Preheat oven to 180C/160 fan forced and grease and line baking trays with baking paper
Beat butter, extract, sugar and almond meal until light and fluffy in small bowl and try not to eat all the raw mixture and save some for the cookies
Add egg, beating until just combined and then stir in sifted flour
Roll tbs mixture into ball and flatten on tray 5cm apart
Use handle of wooden spoon dipped in flour to make the small hole in the middle of each biscuit
Fill each biscuit with some jam be sure not to overflowing just level with top of hole
Bake about 15 minutes and cool on tray.
