I found this recipe in the Australian Table October 1999 magazine. Am not sure if still published. It is an oldie but a goodie. This is especially delicious crumbled into some yoghurt. Enjoy!
Ingredients
350g dried apricots and dates (can also use figs)
juice of 1 lemon
zest of 1/2 lemon
2 tbs cold water
100g rolled oats
50g soft brown sugar
180g butter, melted
Method
Preheat oven 180C
Line a shallow baking tin (27cm x 18cm) with non stick baking paper
In a saucepan put roughly chopped fruit, water, lemon juice and zest.
Heat gently, stirring occasionally until fruit is soft. Approx 5-8 mins.
Remove and cool
In mixing bowl combine, flour rolled oats and soft brown sugar.
Stir in melted butter and mix well
Sprinkle half of crumble mixture over bottom of tin, followed by
all of fruit mixture and top with remaining crumble
Press down firmly
Bake for 30 minutes until lightly browned on top
Remove and and cool in tin. When cold cut into little squares.
