So Very Easy Quiche

Ingredients

2 x Sheets of Shortcrust Pastry
4 x Free Range Eggs
4 x bacon rashers
1 x leek
1 cup of grated cheddar chees
3/4 cup of cream
12 x cherry tomotoes
60 g butter
Salt and Pepper

Method

1. Preheat oven to 180C
2. Defrost the shortcrust pastry and mould into 2 pie trays.
3. Melt butter in non stick frying pan and cook chopped bacon and sliced leek (only the white part) until soft,  set aside
4. Whisk the eggs, cream and salt and pepper together
5. Evenly distribute the bacon and leek mixture into the 2 trays
6. Pour egg and cream mixture into trays over the bacon and leek.
7. Divide cheese and sprinkle over egg mixture.
8. Cut cherry tomatos in half and place in cheese and egg mixutre facing up.
9. Bake in oven for 20-25 until set and slightly golden on top.
10. Let cool, serve with salad.
11. Enjoy!
